Tasty Tuesday: The Glory Bowl

I got this recipe from the Whitewater Cooks recipe book and it is definitely one of my new favourites! I have been eating it non-stop over the last few weeks. It’s got all the food groups and actually managed keep me full from 4-5 hours which almost never happens. It makes an easy lunch or dinner for when you’re on the go!DSC_0686

Ingredients:

  • 8 cups of cooked brown rice
  • 2 cups grated beets
  • 2 cups grated carrots
  • 2 cups toasted almonds
  • 2 cups cubed tofu

The dressing for this bowl is the same as the dressing used in the crispy tofu spinach salad featured on our last Tasty Tuesday post.

Place the cooked rice in a bowl and top with the beets, carrots, spinach, almonds, and sauteed tofu cubes. Drizzle the dressing on top.
